RECIPE for Peanut Butter Cookies

This week for our Tasty Tuesday we're sharing our favourite cookie... Peanut Butter Cookies! They are, in a word, DIVINE and a great crowd pleaser! They give you that lovely warm satisfying feeling of having enjoyed a naughty but delicious treat! They're extremely easy and quick to make and the ingredients, when baked, should provide around 16 small cookies, be slightly crunchy on the outside and lovely and soft on the inside.... heaven!
INGREDIENTS
(Dry)
50 grams soft light brown sugar
50 grams caster sugar
100 grams plain flour
1 teaspoon bicarbonate of soda
(Wet)
50 grams unsalted butter (soft)
1 medium egg
1 teaspoon honey
1 teaspoon vanilla
200 grams peanut butter
METHOD
1. Preheat your oven to 170°C
2. Measure out all your ingredients ready to go
3. Mix together the butter and sugars until lovely and creamy (no dipping fingers in!)
4. Add in your egg, vanilla, honey and peanut butter mix until consistency is smooth but very thick (no licking the spoon!)
5. Now add in the flours and mix well, again, until it is smooth but a thick consistency
6. Now take a good tablespoon size of mixture and put on your ready prepared baking tray - place a good 1.5" apart and flatten sightly with the back of a spoon
7. Place into the middle of the oven for 10 minutes.
NOTES AND TIPS
Use a rounded measuring tablespoon and flatten off with a knife, the mixture should slip nicely out on to the baking tray (as the mixture is slightly greasy), this will give you a lovely dome shape which can be gently flattened with a spoon. Criss cross the surface with a fork or knife to get a nice textured cookie.
If you're using cup sizes an example is 50g = 1/3 cup
As an indulgent treat we used manuka honey (divine!) We also used smooth peanut butter but, for an extra crunch, you may prefer crunchy peanut butter
The above mixture should make around 16 small size cookies
