RECIPE for Healthy Banana and Chocolate Chip Muffins
Last week's Tasty Tuesday was delicious Peanut Butter cookies, and this week we're sharing a recipe from the cookie's partner in crime... the muffin! In our quest for gift ideas, we recently came across a particularly appetizing Banana and Chocolate Chip muffin recipe which we thought we'd share with our followers! Ready in 30 minutes and providing 12 scrumptious treats, its a simplistic but sensationally good recipe! And do you want to know the BEST thing about this recipe? It's filled with wholesome ingredients! Although they might be devilishly tasty, they won't leave you feeling guilty if you have one too many... and you'll be getting one of your five a day.
Ingredients
- 1 cup whole wheat flour
- 1/4 cup vanilla protein powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3-4 ripe bananas
- 1/4 cup honey
- 1 teaspoon vanilla
- 1 tablespoon coconut oil
- 1 egg
- 1/2 cup dark chocolate chips
1. Preheat the oven to 180 celcius and spray a 12 muffin tin tray with nonstick cooking spray. Set aside.
2. In a bowl, add bananas, honey, vanilla, oil and egg. Mix until it is well combined. Add the flour, baking soda and salt and continue to mix to a good consistency. Then proceed to add the chocolate chips.
3. Divide your batter evenly across the muffin tray and bake for 20 minutes.
4. Set aside and let them cool, then dig in to your delicious muffins. Enjoy!
A useful trick - you can pop the muffins into a resealable or airtight container and freeze the treats for 3 months. You don't have to waste them if you're too full to eat them all, and this is a great way to ensure you don't waste ingredients either!
